When we see our food today, we find that it contains some chemical and biological (risks) or contaminants. In this study, we try to make survey on the main contaminants in Egyptian Edible Mushroom, and the medical benefits of these kinds of functional food. The chemical contaminants which we studied are heavy metals and pesticide residues. Meanwhile the biological contaminates are pathogenic bacteria, fungi and mycotoxins. On the other hand, the last part of this work focused on the medical effects of Egyptian Edible Mushroom extract against the carcinogenic Aflatoxin A. Because many studies reported that mushroom as functional food have many medical benefits such as anti-microbial, or anti-diabetic. So, we want to study a new side of these medical benefits such as antitoxin or anti-carcinogen. ISBN:9783846540831
